The revered cocktail program at the Mai-Kai is in experienced and enthusiastic hands as the historic restaurant prepares for its grand reopening in November. The new beverage director and head bartender is Cory Starr, most recently general manager and beverage director at the acclaimed Tiki Tatsu-Ya in Austin, and before that a key member of the team at Three Dots and a Dash in Chicago.

While Starr is used to creating unique offerings at his previous gigs, he’s equally excited about the challenge that lies ahead. “I feel a great responsibility for maintaining the standards of the past,” he said in an interview with The Atomic Grog just after his arrival.

Starr worked at Tiki Tatsu-Ya from 2019 until September 2023, creating the cocktail program from the ground-up before the spectacularly immersive restaurant opened in September 2021. Prior to that, he bartended at the Spirited Award-winning Three Dots and a Dash from 2015 to 2019, often joining beverage director Kevin Beary at events across the country.

The Arizona native cut his teeth as a tropical bartender at the Four Seasons Resort Hualalai on Hawaii’s Kona Coast from 2011 to 2015. Starr was also invited to compete twice (2018 and 2019) in the prestigious Don the Beachcomber Mai Tai Festival at the Royal Kona Resort (finishing second and third). His time in Hawaii cemented is love for Tiki culture and launched him on a trajectory that has taken him to one of the most legendary Polynesian restaurants of the mid-20th century.

At 40, Starr brings to the Mai-Kai a youthful energy, but also vast experience with high-level and high-volume cocktail programs. This will all serve him well in re-establishing the storied bar program begun by Don the Beachcomber alum Mariano Licudine in 1956. Most of the restaurant’s historic cocktails remain the same as they were when the “Houdini of the Liquids” retired in 1979.

“Stepping into this role is unlike anything I have done before,” Starr said. “While Tiki cocktails have so much history tied to them already, the Mai Kai drinks are legendary and my job here is more preserving history and bridging the gap from the Mai Kai that we all adore to the new era of the Mai Kai.”

The event is geared toward professionals and hardcore enthusiasts, but it also appeals to amateurs who want to dip their toes into the ever-popular spirit. The new main venue will help draw a broad audience. No longer confined by the ritzy yet cramped Hilton Cabana hotel in the Mid-Beach area, the event is moving 4 miles south to the more versatile Miami Beach Convention Center in South Beach for most of its events.

The Gates Hotel, which will host guests as well as a Sunday party, is a half mile away, roughly a 12-minute walk. The convention center, home of such varied events as the Miami International Boat Show and Florida Supercon, has ample space to host multiple groups simultaneously.

The convention center recently completed an extensive renovation and expansion that has been nominated for an Urban Land Institute award, honoring projects that elevate the standards of the industry. The center hosts more than 600,000 visitors a year and is home to $10.2 million in public art acquired by the city. There’s also 12 acres of green space, including a lush tropical park.

But beyond the spiffy new facilities, what should excite locals and others who must drive to Miami Rum Congress is the convention center’s 6 acres of surface parking. No more wasting valuable rum-tasting time doing endless circles around the Hilton’s neighboring streets and tiny municipal lots, hoping for an empty space. Beachside hotels notoriously have limited guest parking.

The new location is also closer to downtown Miami and its nightlife, most notably the acclaimed tropical cocktail and rum havens owned and operated by Daniele Dalla Pola: His flagship Esotico Miami and the adjacent hidden Tiki speakeasy, the Kaona Room. Dalla Pola and his team will host rum dinners and other special events before, during and after the main Rum Congress.

It’s roughly 4 miles (around 30 minutes in peak Miami traffic) across the lesser-known Venetian Causeway (a $2.25 toll) from the convention center area to Esotico. There are larger, free causeways (195 and 395) to the north and south, but those routes are longer and less direct. On the Venetian route, it’s also a quick 5 minute jaunt from Esotico to Wynwood, the area’s vibrant art district.

Now that we’ve covered the logistics, let’s break down the activities day-by-day. Industry attendees and hardcore devotees will likely be attending many, if not all, of the happenings. Take 5: Otto von Stroheim, pioneering event promoter and Tiki tastemaker

One cannot imagine what the modern Tiki revival would be like without Otto von Stroheim. A much less festive place, that’s for sure. Since 2001, the Los Angeles native has produced, along with his wife Baby Doe, the first and largest Tiki event of its kind in the world, Tiki Oasis in San Diego. Before that, he was among a small group of devotees that is credited with igniting interest in mid-century Polynesian culture that continues to thrive and grow more than 25 years later.

In addition to Tiki Oasis, Otto was the creator of several influential touchstones in Tiki’s modern history, including Tiki News magazine, and a series of curated art exhibits and books (Tiki Art Now). Otto can also be found at Forbidden Island in Alameda doing a regular monthly DJ gig.

I cornered Otto at The Mai-Kai in Fort Lauderdale during Miami Rum Renaissance Festival in April and asked him five burning questions:

1. You’ve been at ground zero of the Tiki revival since the very beginning. What do you miss about the early days, and what’s better now?

Back then, there were fewer eyes watching you, less pressure, less people to answer to. And, you know, there was less knowledge so if you got something wrong or it was yet to be proven, or if you got a fact wrong, or if you told a story and left out a fact, or if you had a recipe and didn’t get the ingredients right, nobody was there to say whether that was right or wrong. You were moving the peg forward either way. Now there’s so much knowledge and so many people involved, and the knowledge can be dispersed very quickly, if you make a statement or you’re interviewed in a newspaper or a blog, or you write a book or post something or publish something, there’s going to be somebody out there who knows a little more, or knows that you left something out, and they’re going to call you on it. It’s kind of funny because in the old days, people were like, “Oh, that’s great, cool. The recipe for the Mai Tai. Awesome. You know that, alright.” It was a little more relaxed in that way. A little bit less pressure, which would allow you to kind of have more fun in a way.

Take 5: Ian Burrell, global rum ambassador and organizer of the UK RumFest

There’s nobody better suited to represent rum than the globe-trotting Ian “Rum Ambassador” Burrell, a UK native of Jamaican descent who seems to have the fun and lively spirit running through his veins. If you live anywhere on this planet, he’s likely been at an event nearby, spreading the gospel of cane spirits. Last year, he amazingly made appearances on all seven continents.

This week, he’s back in South Florida for the annual Miami Rum Festival, where he always puts on an informative and entertaining show, whether it’s at a seminar (this year, he’s presenting “The Wonderful NEW World of Tiki Cocktails: 10 Reasons Why It’s Here to Stay”), or just hanging out and tasting rums. We caught up with Ian at last year’s rum fest directly after his spirited debate with Jeff “Beachbum” Berry over who was the true rum ambassador, and we posed the five questions you’ll find below.

Take 5: Martin Cate, owner of Smuggler’s Cove in San Francisco and rum cocktail maestro

You may have seen Martin Cate igniting flaming bowls of fun on the Cooking Channel or entertaining attendees at Tiki and rum events around the world. If you’re a cocktail or rum enthusiast, you’ve certainly heard of Smuggler’s Cove, his San Francisco lair that has redefined the modern rum cocktail and has been acclaimed as one of the world’s best bars, period.

He’s also somewhat of a hero to the Tiki home bartending community, quickly rising from hobbyist on the Tiki Central message board to bartender at the Trader Vic’s flagship San Francisco location in 2005, to Forbidden Island, his first acclaimed Tiki bar in Alameda in 2006. He sold his interest there and opened Smuggler’s Cove in 2009.

In April, while Martin was in South Florida for an appearance at the Miami Rum Renaissance Festival, we cornered him in the gardens at Fort Lauderdale’s Mai-Kai, one of his favorite places in the world to enjoy classic Tiki cocktails. Jeff “Beachbum” Berry is extremely passionate about Tiki, tropical drinks and The Mai-Kai. In April, we caught up with the author of such essential Tiki cocktail bibles as Grog Log and Sippin’ Safari in his natural habitat (The Mai-Kai gardens) and posed the following questions.

1. If you could transport yourself for one night back in time to any Tiki bar or restaurant, what would it be and when?

That would be Don the Beachcomber’s in 1934: Ground zero, the big bang, the creation of the Tiki bar as we know it – by Donn, right after Prohibition. I would have loved to have seen what that was like.

2. If Food Network or the Travel Channel came to you and said, “Pitch us a show about tropical drinks,” what would you suggest?

I would suggest that they just take their suggestion and shove it. Because none of those channels, none of those hosts, none of that garbage is about what these places are about. What these places are about is “aloha,” it’s about the spirit of true hospitality, of welcoming, of making you feel important, of making you feel good. All of these TV channels traffic in all of this competition bullshit, where restaurants are not places to go to relax and unwind. Where you get stressed out and compete against your fellow chefs or bartenders. I hate all that. That’s the antithesis of the true spirit of hospitality, of genteel camaraderie, of going to a place to exchange confidences and emotions, and happy experiences with people that you either know or you’ve met at these places. It’s not about competition, it’s not about who’s the best, it’s not about some guy with spiked hair telling you about the awesomeness of the food. That’s just artificial garbage. … All these people are self-appointed experts. They don’t know anything about anything.

Take 5: Rodney Mayo, guiding light of South Florida’s indie entertainment scene

To say the South Florida nightclub and restaurant scene would be a much more bland and boring place without Rodney Mayo would be a great understatement. From humble beginnings in 1987 at his Respectable Street Cafe in downtown West Palm Beach to today’s empire of 13 hip bars and eateries with more in the works, Mayo has been at the forefront of South Florida’s growth of independent, wildly creative nightspots.

He’ll be celebrating his 25th year in business on Aug. 25 when Respectable Street hosts its annual block party on Clematis Street. The event will feature four stages and 25 bands, including punk legends The Misfits. The entire event is free and also will feature an open bar from 8 to 9 p.m. at participating clubs. We’ll have more updates as the event approaches, or check Respectable Street’s Facebook page.

We caught up with the reclusive Mayo recently at his latest project, the Hullabaloo gastropub, set to open this summer across from Respectable Street in the old Lounge space. Adjourning next door to his surf-themed Longboards restaurant, we posed these five questions:

This is the second in The Atomic Grog’s series of short interviews with noted personalities involved in events, music, art, cocktails and Tiki/retro culture.

Kern Mattei was destined to be general manager of The Mai-Kai. His father, Kern Sr., held the same position at the legendary Polynesian palace from 1964 to 1991. His mother was a Mai-Kai dancer, and he literally grew up in the restaurant. He was born in 1966, 10 years after it opened, and now works in the same office that his father did.

He worked a variety of jobs at The Mai-Kai while in school, then began as a manager in 1993 after earning a bachelor’s degree in hospitality from Florida International University. Kern lives in Fort Lauderdale with his wife, Elke, and two children: Cheyne and Nicholas. I conducted this interview with the always dapper Kern on July 30.

Welcome to the first in a series of short interviews with noted personalities involved in events, music, art, cocktails and Tiki/retro culture. These aren’t intended to be all-encompassing, life-history-spanning interrogations. Rather, we’re aiming for a fun, quick take on the typical interview. Just five questions in roughly 5 minutes, hence the name Take 5.

Our first subject is a longtime friend and associate. He’s truly a renaissance man in the world of lowbrow culture. Just don’t try to pigeonhole him. He’s a fine artist, but he’s also a tattoo artist. He’s intelligent and soft spoken, but he’s also the quintessential heavy metal guitarist. His creativity seemingly has no limits.
