The 23rd annual event at the Town and Country Resort features live entertainment (Man or Astroman, The Tikiyaki Orchestra, Messer Chups, The New Les Baxter Orchestra, Shorty’s Swingin’ Coconuts, King Kukulele, Medusirena), seminars (Sven Kirsten, Charles Phoenix, Jeff “Beachbum” Berry, Ian Burrell), artists, vendors, and much more.

For the first time in event history, South Florida’s historic Mai-Kai will be on hand for not one, but two official presentations. Last year, designer and artist Allsmiller taught a sold-out, two-day shelf-building class shortly after diving into his work restoring The Mai-Kai. This year, he’ll be featuring one of his restored vintage lamps from The Mai-Kai in a lamp show that runs all weekend.

On Friday, Hayward and Mattei will present a seminar on one of The Mai-Kai’s most iconic cocktails, the Derby Daiquiri. On Saturday, they will be joined by Allsmiller for a presentation jam-packed with the latest information on the restoration and reopening.

The Mai-Kai’s Derby Daiquiri was one of the most celebrated cocktails of the mid-century, a simple riff on the Cuban classic by master mixologist Mariano Licudine. Six decades later, it remains one of the most popular drinks on the historic restaurant’s menu. It also provides a case study on how a vintage recipe can be enhanced by just a few simple tweaks, creating something new and exciting. Join The Mai-Kai’s longtime manager, Kern Mattei, and cocktail blogger Jim “Hurricane” Hayward for an examination of Licudine’s genius as they guide you toward creating your own signature classic.

About Kern and Jim

Kern Mattei was born into The Mai-Kai family and has worked there since his youth, from barback and bartender to the past three decades as manager. His father was the GM before him, and his mother performed in the stage show. His unique position makes him intimately familiar with the restaurant’s famous cocktails, their history and the secret recipes. During the current refurbishment, he runs the takeout cocktail program, providing quarts and gallons of classics like the Barrel O’ Rum and Black Magic to thirsty locals. Blogger and journalist Jim “Hurricane” Hayward has covered The Mai-Kai for more than a decade, documenting and recreating the cocktail recipes in exacting detail. As we approach a late 2023 reopening, The Atomic Grog has become a key source of information on The Mai-Kai restoration project.

Here’s a glimpse of what you can expect during the first-ever official Mai-Kai cocktail seminar at Tiki Oasis:

  • Three different Daiquiris will be served by the Tiki Oasis cocktail crew, including the Derby, as we reveal and dissect each recipe.
  • Rare and never-before-seen images from the archives will be shown, including Mattei family photos.

  • We’ll take the most detailed look yet at the creation and explosive popularity of the Derby Daiquiri, known as “the $100,000 Drink.”

  • The seminar will conclude with the premiere of a new recipe created especially for Tiki Oasis and San Diego.

The Mai-Kai is a miraculous survivor. The South Florida historic landmark endured a near-catastrophic roof collapse in late 2020 but found new owners with deep pockets and an ambitious vision to preserve it for generations to come. When the restoration of the 66-year-old Polynesian palace is complete, it will be meticulously returned to its former glory and also include millions of dollars in enhancements that respect the past and charge boldly into the future. In this multimedia presentation, embedded journalist Jim “Hurricane” Hayward of The Atomic Grog blog will take you behind the scenes at The Mai-Kai. He’ll be joined by two key members of The Mai-Kai team: Creative director “Typhoon Tommy” Allsmiller will offer unique insights into the painstaking restoration efforts, while longtime manager Kern Mattei will provide up-to-the-minute news on the renovation project, along with his unique perspective on Mai-Kai history.

Jim “Hurricane” Hayward is a veteran journalist and blogger, best known for The Atomic Grog blog – covering Tiki events, music, art cocktails and culture since 2011. The Hukilau’s 2020 event in Fort Lauderdale may have been wiped out by the coronavirus pandemic, but that doesn’t mean you can’t celebrate the Polynesian Pop lifestyle in the privacy of your own Tiki bar or with other villagers in your local scene. Following are a week’s worth of suggestions that pay homage to the participants, along with some ways you can lend a hand in these trying economic times.

The Hukilau

Many of us were looking forward to the 19th annual edition of the East Coast’s largest Tiki weekender on June 3-7 at the B Ocean Resort and The Mai-Kai restaurant. But we’ll have to wait for next year’s 20th anniversary to meet up with all our old friends, savor rum and Tiki cocktails made by some of the world’s top bartenders, dance to live bands and DJs, watch Marina the Fire Eating Mermaid and her aquaticats perform through the portals of Wreck Bar, plus so much more.

But as the shutdowns, stay-home mandates and restrictions due to the pandemic stretch into a fourth month, it’s possible to get a taste of The Hukilau without going far or putting yourself and others at risk. We’ve come up with ideas stretching over seven days, from educational symposiums to a special virtual event set for Friday and Saturday at The Mai-Kai. While The Hukilau’s kickoff party typically doesn’t launch until Wednesdays, we know many villagers like to arrive early and get a head start. The Hukilau 2019 also featured special events for bartenders starting Monday, so we’re following that plan.

MONDAY, JUNE 1: Learn about rum

Rum and education are two of the foundational elements of The Hukilau, so what better way to start the week than a special presentation by Matt Pietrek. The former Microsoft specialist and writer has turned his passion for rum and Tiki cocktails into a second career, earning an impressive three nominations in the upcoming 2020 Spirited Awards at Tales of the Cocktail in July.

Pietrek was nominated for Best Cocktail & Spirits Writing for an article on his long-running Cocktail Wonk blog, plus Best New Cocktail or Bartending Book for Minimalist Tiki: A Cocktail Wonk Look at Classic Libations and the Modern Tiki Vanguard, written with his wife Carrie Smith and released last summer. The blog is also among the heavyweight industry players nominated in the Best Cocktail & Spirits Publication category.

In his debut at The Hukilau last year, Pietrek did double duty with a symposium (How the British Navy Influenced the Birth of Tiki) and Okole Maluna Cocktail Academy class (Stocking Your Home Tiki Bar). Pietrek also joined The Atomic Grog for The Rums of The Mai-Kai: From the Back Bar to Your Glass, a special presentation and discussion in the main dining room at the historic restaurant. He was in the midst of digging up more fascinating facts for this year’s Hukilau guests when everything was put on hold.

But Pietrek has kept busy over the past several months with regular appearances online in a very active and engaged rum community. This new presentation covers The London Docks and Rums of the British Empire, an offshoot of his fascination with Navy Rum. The Hukilau’s Okole Maluna Cocktail Academy classrooms may be dark this year, but there’s been no shortage of bartender knowledge spreading on the Internet, thanks to many talented mixologists around the world keeping their audience engaged. I’ve never seen so many professional recipes and trusted information available daily like it is now.

Elite among these engaging bartenders is Georgi Radev, owner/operator of Laki Kane in London, author of Let’s Get Tropical: More than 60 Cocktail Recipes from Caribbean Classics to Modern Tiki Drinks (2019), and a veteran Okole Maluna Cocktail Academy instructor. Last year, he taught Tiki on the Thames and Tiki Mayhem (the latter with international colleagues Daniele Dalla Pola and Ian Burrell

Since the pandemic hit, Radev has been tireless. He launched “Mixology From The Fridge” on YouTube and Facebook, featuring dozens of entertaining how-to videos with recipes for cocktails, syrups and more. You can support Radev by watching his YouTube videos, buying his book and ordering items from the Laki Kane online store.

Radev joined forces with another online juggernaut, Tiki marketing maven and event organizer Jupiter Jones, for a weekly “Tiki Tuesday” broadcast on the Zavvy network of shows and podcasts. Their past guests have included Tonga Hut manager and rum/cocktail expert Marie King; Tiki and music historian Brother Cleve; and Trader Vic’s marketing exec Eve Bergeron, granddaughter of company founder Victor Bergeron. All of these VIPs had presentations or pop-up bars last year at The Hukilau, and Brother Cleve was scheduled to return in 2020 as a DJ.

This week’s guest, Spain’s Oriol Elias, is a noted bartender and rum expert as well as an authority on his country’s Tiki history. He was preparing for his first Hukilau presentation this year as a new cocktail academy instructor. The Hukilau’s 2020 entertainment lineup will be announced on Feb. 3, when event tickets and passes go on sale for the 19th annual Tiki weekender June 3-7 in Fort Lauderdale. While The Mai-Kai remains the nerve center of the Polynesian Pop celebration for the 18th straight year, most of the festivities will be centered at the B Ocean Resort on Fort Lauderdale Beach.

After five years as host hotel, the Pier Sixty-Six Hotel & Marina closed for a years-long refurbishment and re-imagining on the day after The Hukilau 2019. To give you a preview of what you can expect during the whirlwind weekend, following is a look back at last year’s festivities. While this Top 10 list is nowhere near complete in capturing the diversity of activities that encompassed the five-day bash, it offers a snapshot of some of the more memorable moments.

Oct. 6 – The Art of Tiki: Exhibition opening party and book release at La Luz De Jesus Gallery in Hollywood, Calif. The launch of the 21st anniversary Art of Tiki show (curated by Otto von Stroheim), which runs through Oct. 29, along with the accompanying book by author Sven Kirsten (Tiki Pop, The Book of Tiki). The original Art of Tiki exhibition in 1996 ushered in the postmodern Tiki era, introducing new art by such acclaimed artists as Mark Ryden, Shag, Mitch O’Connell and The Pizz. The new exhibit brings back some artists from the original show (Shag, O’Connell, Von Franco, Crazy Al Evans, Jeffrey Vallance, Mary Fleener) plus artists from around the world – Bai (France), Danielle (Australia), Mookie Sato (Japan), and Dr. Alderete (Mexico). The show includes 30 of today’s top Tiki artists, including Bosko, Brad “Tiki Shark” Parker, Thor, Kevin and Jody, Tiki Diablo, Tiki Tony, Doug Horne, Big Toe, Ken Ruzic, Gecko, Michael Uhlenkott, Joe Vitale, Donella Vitale, Derek Yaniger, Scott Scheidly, and Eric October. If you can’t make it to the show, you can order the book online. As a special bonus, the exhibit includes “The Art of Tiki: No False Idols,” billed as “the world’s first and most comprehensive public offering of original, mid-century Tiki decor.” It will feature commercial carvings, fixtures, furniture and lighting from some of the most famous and obscure mid-century Tiki temples. Items for sale include those from such notable establishments as Trader Vic’s, Kona Kai and Kon Tiki culled from the private collection of Jordan Reichek. Oct. 7 – Voices of the Xtabay: A Tribute to Yma Sumac at the Hammer Museum at the University of California, Los Angeles. A free event featuring Latinx vocalists and musicians reimagining the songs of legendary Peruvian singer Yma Sumac, whose vocal range was said to be well over five octaves. The concert honoring the queen of exotica was inspired by the Hammer exhibition “Radical Women: Latin American Art, 1960–1985” and features a band led by Alberto López of Jungle Fire.

The Hukilau was graced this year by the presence of Humuhumu Trott, a longtime and prolific Tiki revivalist who has helped keep the true spirit and ideals of the original movement alive for more than a decade. The creator of the essential Critiki and Ooga-Mooga websites presented a special symposium for bartenders, “Tiki: A Story for Bartenders,” at 11 a.m. at The Mai-Kai.

The Hukilau’s takeover of the Pier 66 began in earnest as hordes of aloha-shirt-wearing villagers arrived and began checking in at the registration desk. Many were excited to receive a goodie bag stuffed with freebies from The Hukilau and its sponsors. “Amazing swag bags! Thank you,” wrote Glenn & Carol from SoCal on the official app.

Christie “Tiki Kiliki” White – The Hukilau’s co-creator, co-founder, producer, and organizer – greeted guests on the app: “Kick back and relax. You have a busy night ahead of you. You haven’t seen nothin’ yet!” Meanwhile, some guests posted their progress as they made the trip south. “Hukilau or bust,” Mr Kane wrote in the app. “Leaving Orlando now for Tiki nirvana.” On Facebook, AnnaMarie Khan of Jupiter wrote: “Just spotted a coconut on the shoulder of I-95 – we must be close!”

The Hukilau’s special swag included a coffee mug, swizzle sticks, matches, sunscreen, sunglasses, and a do-not-disturb door hanger, most featuring Shag-designed artwork. Among the many other items in the themed bag were a Hukilau mug, a Rhum Barbancourt jigger, a Mai-Kai sticker, and an extensive full-color program.

Guests also used the The Hukilau’s official app to ask questions about the schedule as well as seeking, selling and trading event tickets, hooking up with friends, and sharing details about the hotel. There was also a good deal of activity surrounding the new Smuggler’s Cove trading cards, with many villagers quickly getting into the spirit of quickly collecting the full set. Others shared the aloha spirit in other ways: “Some time tomorrow I have a half gallon of barrel aged Zombies I need to share,” Keith Hudgins wrote. “Who’s with me?”

Existing Friday night passholders can buy wristbands for $35 giving them access to the special Barbancourt cocktails during High Tide (up to eight per person). Cocktails are also available for $10 each. Non-passholders can buy a Friday day pass that also includes the Tiki Road Trip Pool Party (noon-4 p.m.) and Tiki Treasures Bazaar (10 a.m.-8 p.m.) for $129. A Friday night pass is $99 (or $69 without drink bracelet). Stacy’s Polynesian tidbits will be sold à la carte. Hotel bars will also be selling cocktails and non-alcoholic beverages.

Miller, an accomplished Big Apple bartender and brand ambassador, is host of the city’s most celebrated Tiki cocktail event, Tiki Mondays With Miller. He’ll be bringing many of his motley crew with him to The Hukilau to help him with the Rhum Barbancourt pop-up bar, including Ryan “Corporal Captain” Liloia, Jelani “Swabble” Johnson, and Garret “Dr. Funk” Richard. They’ll be pouring four different Tiki cocktails featuring Rhum Barbancourt, a venerable spirit from Haiti that will have a high profile at this year’s event. Miller issued a missive from his pirate’s lair promising “an assortment of temptresses, rogues and scoundrels.” His captain’s orders: “Tortuga ain’t got nuthin on Tiki Mondays With Miller at The Hukilau.”

Miller and an all-star lineup of world-class bartenders (Jeff “Beachbum” Berry, Martin Cate, Paul McGee, St. John Frizell) will also be mixing with Rhum Barbancourt at the sold-out Tiki Tower Takeover on Thursday night. You can sample the distinctive rhums and see them mixed in cocktails Thursday through Saturday outside the Tiki Treasures Bazaar in the brand’s special tasting booth.

As a special treat, Friday’s High Tide event will also include The Hukilau debut of larger-than-life chef Jim Stacy, best known for his appearances on Food Network and the Cooking Channel. Stacy is a renaissance man whose talents include butcher, bartender, chef, touring rock ‘n’ roller and tattoo artist. He cut his teeth in the Atlanta bar and restaurant scene at the Star Community Bar and Starlight Drive-In Theatre, then became a local and national TV food authority. He recently sold the Atlanta-area Pallookaville Fine Foods in preparation for a new concept sure to please fans of traditional Polynesian-themed food and cocktails.

Stacy will soon be opening MoaKai, a full-blown Polynesian/island restaurant spotlighting “classic resort dishes made with Southern soul food ingredients.” Expect the themed Atlanta eatery to include such creative, taste-tempting dishes as lau-lau with collards instead of taro leaves, and poi made with sweet potato. “We’ll be doing a traditional Hawaiian barrel smoked chicken as our specialty with additional emphasis on vegetarian and vegan menu items,” Stacy said in a recent interview. At the High Tide party, Stacy will be cooking up “Polynesian delights featuring Rhum Barbancourt expressions with a soul food twist,” according to the event announcement.

Of course, Stacy’s restaurant will include a Tiki bar, The Barnacled Mermaid. Guests can sample Stacy’s fresh take on tropical mixology on Friday afternoon during the Tiki Road Trip Pool Party along with other top bars from across the country: Porco Lounge & Tiki Room (Cleveland), Foundation Tiki Bar (Milwaukee), Aku Aku (Orlando), and The Happiest Hour and Slowly Shirley (New York City). Stacy is a longtime supporter of The Hukilau who attended last year’s event (see photos). But this will be his first year as a participant. He also featured The Mai-Kai on an episode of Offbeat Eats in January 2015.

Interest is high in The Hukilau for its 15th anniversary gathering, which will also celebrate the upcoming 60th birthday of The Mai-Kai. The historic Pier 66, another 60-year-old landmark, is sold out of rooms. But event co-founder and organizer Christie “Tiki Kiliki” White quickly lined up an overflow host hotel, the nearby Hilton Fort Lauderdale Marina Hotel. The Hukilau has been gearing up for its 15th anniversary event in Fort Lauderdale on June 8-12 with a flurry of news and announcements since early April. Here’s all the latest:

Tiki Road Trip Pool Party

Get your tickets now for the Tiki Road Trip Pool Party, a condensed version of a cross-country road trip to five bars in five different states serving exotic tropical cocktails. On Friday, June 10, from noon to 4 p.m., guests will have the opportunity to sip cocktails and chat up the bar staff from Porco Lounge & Tiki Room (Cleveland), Foundation Tiki Bar (Milwaukee), Aku Aku (Orlando), plus The Happiest Hour and Slowly Shirley (New York City). Also joining the party will be Cooking Channel star Jim Stacy, who will be offering a sneak preview of his upcoming Tiki bar in Atlanta, the Barnacled Mermaid. The party takes place at the Pier 66 main pool and surrounding courtyard. Tickets ($20 for weekend passholders, $49 for non-passholders) include one drink from each bar. Also on hand will be the author of the book that inspired the event: James Teitelbaum (Tiki Road Trip, 2003). Also announced in early April was a special screening of Korla The Movie, a documentary film about eccentric and influential musician Korla Pandit (1921-1998). The screening will be held during the finale at The Mai-Kai on Sunday, June 12.

The host Hyatt Regency Pier 66 officially sold out of rooms for The Hukilau on April 20. But co-founder/organizer Christie “Tiki Kiliki” White quickly announced the overflow host hotel, the waterfront Hilton Fort Lauderdale Marina Hotel. Located just over the Intracoastal Waterway bridge from Pier 66, the Hilton includes such amenities as free wi-fi and beach shuttle, plus a large pool and relaxing environment just a short walk from all the festivities. Room rates start at $119 for a standard king or double.

Also sold out: Both dinner shows at The Mai-Kai during the Saturday night main event on June 11. This means the entire restaurant will be the domain of The Hukilau’s villagers for the legendary Polynesian Islander Revue, the longest-running authentic South Seas stage show in the United States, including Hawaii. However, the show several times a night, so attendees are welcome to catch it on one of the other nights during the festivities. We suggest booking dinner in the showroom after the finale on Sunday, or during Wednesday’s opening-night party (or both). Also, there might be space available Saturday night in the restaurant’s back dining areas, especially later in the evening. Call The Mai-Kai at (954) 563-3272 for reservations and/or plan on arriving late that night. You can also email Pia Dahlquist ([email protected]) to get on a waiting list. Typically the crowd thins out as the night goes on. The Mai-Kai can hold nearly 1,000 guests, but efforts are being made to keep it from becoming too overcrowded with demand high this year. The venerable Tiki temple, which will celebrate its 60th anniversary in December, was recently named to the National Register of Historic Places. BREAKING NEWS: Fire closes Trader Vic’s in Portland

A March 2 fire at the medical office above the Trader Vic’s location in Portland forced what was originally thought to be a temporary closing of one of the few remaining North American outposts of the venerable Polynesian restaurant chain. But news later leaked out that due to mounting debt and high operating costs, the franchise owner was forced to close permanently, Wilmanette Week reported.

The fire burned through most of the ceiling in the bar and dining room, but a Facebook post on the restaurant’s official page that same day indicated that repairs would be made. After several weeks, however, a manager posted on his personal Facebook account that Trader Vic’s Portland “is now permanently closed” less than 5 years after it opened. In a follow-up, he said that the re-opening would have taken eight weeks and the owner decided to close after struggling to “keep above water” due to the high rent and overhead of the 8,000-square-foot restaurant.

The return of Trader Vic’s to Portland was heralded in August 2011 as the beloved brand joined a burgeoning local Tiki scene that had grown around the annual Tiki Kon and worldwide revival. Portland previously had a longstanding Trader Vic’s in the Bensen Hotel from 1959 to 1996.

The new location in the Pearl District was warmly received by locals and Tikiphiles alike. It was filled with authentic decor, including Tikis, tribal masks, glass floats and outrigger canoes. The food and drinks were also highly regarded, but apparently the costs were too high to stay competitive in one of the country’s top food and beverage cities. The closing leaves only two Trader Vic’s restaurants in the United States: the company-owned flagship location in Emeryville, Calif., and a long-rinning franchise in Atlanta. There are 18 overseas locations in 11 countries.

Some of the biggest names in the modern Tiki revival will gather at The Hukilau for a groundbreaking symposium as part of the 15th annual festivities June 8-12 in Fort Lauderdale. “Raiders of the Lost Tiki Culture” will bring together author and bar owner Jeff “Beachbum” Berry (Latitude 29, New Orleans), event promoter Otto von Stroheim (Tiki Oasis), historian Humuhumu (Critiki), author and bar owner Martin Cate (Smuggler’s Cove, San Francisco), artist Crazy Al Evans, acclaimed artist Shag, and event promoter Christie “Tiki Kiliki” White of The Hukilau for a rousing two-part panel discussion hosted by Hurricane Hayward of The Atomic Grog. Author Sven Kirsten (Tiki Pop, The Book of Tiki) will also participate via Skype. Tickets are on sale now for $15 for passholders, $30 for non-passholders. In honor of The Hukilau’s 15th year and the 60th anniversary of The Mai-Kai, event co-founder/organizer Christie “Tiki Kiliki” White has assembled some of the top names in the Tiki revival for special events and symposiums that promise to educate as well as entertain. On March 3, she announced a first-of-its-kind Tiki event, a groundbreaking gathering of some of the biggest names in the modern revival.

Tickets are on sale now for “Raiders of the Lost Tiki Culture”, a freewheeling panel discussion on Saturday, June 11, moderated by yours truly and featuring Jeff “Beachbum” Berry, Otto von Stroheim, Humuhumu, Martin Cate, Crazy Al Evans, Shag, and Tiki Kiliki herself. The godfather of the Tiki revival, Sven Kirsten, will participate via Skype. “We would not be celebrating today if it weren’t for these people,” Tiki Kiliki said of her colleagues on the panel.

It’s just $15 for this very special event, which will follow von Stroheim’s “2001: A Tiki Odyssey” symposium at 1 p.m. in the Panorama Ballroom at the Pier 66 hotel. Previously announced symposiums include author and bar owner Berry, Shag, Humuhumu, Tiki historian Tim “Swanky” Glazner, tattoo artist Paul Roe, plus South Florida artists Tom Fowner and Will Anders.

The “Raiders of the Lost Tiki Culture” panel discussion will be divided into two parts: First, Kirsten, Berry and von Stroheim will discuss the early days and evolution of the revival. Then, they’ll be joined by Humuhumu, Cate, Evans, Shag, and Tiki Kiliki to talk about how the revival inspired them to push the boundaries even farther. “I don’t want people to forget how we got here,” Tiki Kiliki said.

You’ll hear the stories of how Tiki became a passion for a select few Californians, and how they revived this lost culture for the rest of the world to enjoy. Learn how they did their research and how they found each other, kicking off a new renaissance that continues to this day. The rest of the panel will talk about their discovery of Tiki, and how they approach their own unique experiences.

I’ll be quizzing the panelists about their place in the Tiki pantheon, and the audience will also have an opportunity to ask questions. A special cocktail is also included in the price of admission. It’s recommend you attend von Stroheim’s symposium beforehand to get the full backstory on how it all started.
