The revered cocktail program at The Mai-Kai is in experienced and enthusiastic hands as the historic restaurant prepares for its grand reopening in November. The new beverage director and head bartender is Cory Starr, most recently general manager and beverage director at the acclaimed Tiki Tatsu-Ya in Austin, and before that a key member of the team at Three Dots and a Dash in Chicago.
While Starr is used to creating unique offerings at his previous gigs, he’s equally excited about the challenge that lies ahead. “I feel a great responsibility for maintaining the standards of the past,” he said in an interview with The Atomic Grog just after his arrival.
Starr worked at Tiki Tatsu-Ya from 2019 until September 2023, creating the cocktail program from the ground-up before the spectacularly immersive restaurant opened in September 2021. Prior to that, he bartended at the Spirited Award-winning Three Dots and a Dash from 2015 to 2019, often joining beverage director Kevin Beary at events across the country.
The Arizona native cut his teeth as a tropical bartender at the Four Seasons Resort Hualalai on Hawaii’s Kona Coast from 2011 to 2015. Starr was also invited to compete twice (2018 and 2019) in the prestigious Don the Beachcomber Mai Tai Festival at the Royal Kona Resort (finishing second and third). His time in Hawaii cemented is love for Tiki culture and launched him on a trajectory that has taken him to one of the most legendary Polynesian restaurants of the mid-20th century.
At 40, Starr brings to The Mai-Kai a youthful energy, but also vast experience with high-level and high-volume cocktail programs. This will all serve him well in re-establishing the storied bar program begun by Don the Beachcomber alum Mariano Licudine in 1956. Most of the restaurant’s historic cocktails remain the same as they were when the “Houdini of the Liquids” retired in 1979.
“Stepping into this role is unlike anything I have done before,” Starr said. “While Tiki cocktails have so much history tied to them already, The Mai Kai drinks are legendary and my job here is more preserving history and bridging the gap from The Mai Kai that we all adore to the new era of The Mai Kai.”
If there were any doubts that the inaugural “next gen” Don the Beachcomber restaurant and tropical bar would not live up to the high standards of its namesake, they were quickly put to rest during last week’s grand opening in Madeira Beach on Florida’s southwest Gulf Coast.
The first location in a planned national rollout of escapist establishments inspired by the founding father of faux Polynesian cocktails opened to the public on Friday, Feb. 23, after three days of private parties for friends, family and VIPs. Owned and operated by Tampa- based 23 Restaurant Services, the vast 298-capacity restaurant was firing on all cylinders from the get-go.
“We are thrilled with our opening weekend, starting with a largely attended VIP party on Thursday evening,” Marc Brown, president of 23 Restaurant Services, said via email Monday. “We had over 1,200 guests join us Friday through Sunday.”
“We continue to be so excited to be a part of this community and look forward to sharing our amazing vibe and delicious food and drinks with you all,” he said, noting the huge social media reaction and “overwhelmingly positive” reviews.
We attended Thursday’s pre-opening party as well as lunch and dinner seatings during Friday’s service, witnessing a nearly flawless launch by every measurable standard. The well-trained staff of managers, greeters, servers, food-runners, bussers, and bartenders operated like a well-oiled machine. And if there were any culinary or mixological misfires from the kitchen or bar, they were few and far between.
When we arrived late for the first official dinner service, all but one of the 20 tables and booths inside the highly immersive restaurant was full, and all of the 30 or so bar seats were taken. On the patio under a large thatched roof, at least a third of the tables were full despite a steady drizzle. Our Uber driver said he had been taking passengers there all day.
Customers were three deep at the bar for hours during the peak of service, beverage director Marie King told us later. “It was a good night.” And the crowds kept coming. The restaurant was just as packed when we left hours later, around 10 p.m.
Managing partner Sebastien Amoruso seemed very satisfied while surveying the scene and monitoring first-day operations. “It’s a good day,” he said during dinner service. “I’m happy. For the first day, we’re doing great.”
Amoruso estimated that 500 guests would be seated on opening day, but this might not include many who bellied up to the bar and didn’t register in the computerized point-of-sale system. I counted roughly 112 seats inside and 115 outside, plus lots of room for standing near the bar.
More seats could be added if needed, Amoruso, said. If opening weekend is any indication, that may be necessary. Saturday night was even busier than Friday, reported Donn Beach biographer Tim “Swanky” Glazner, who attended both.
But the venue never seemed crowded, with plenty of room for guests to relax and enjoy the atmosphere. Amoruso cited the expertise and experience of 23 Restaurant Services.
The East Coast’s longest running Tiki weekender is back in full force this June, including many familiar faces along with new features and entertainment for villagers to enjoy at the oceanfront Beachcomber Resort in South Florida. Tickets and room reservations are available now for the 20th live edition of The Hukilau, set for June 9-12, 2022.
Pompano Beach’s Beachcomber Resort & Club hosted the scaled-down 2021 event, proving to be the perfect venue for a more intimate but mostly outdoor gathering of the Tiki tribe. While the venue remains small and cozy, the lineup of guests has been expanded for 2022 to include some of the top names in the Tiki, rum and cocktail world. Billed as a “four-day Tiki extravaganza celebrating the history of Polynesian Pop,” The Hukilau has always beefed up that basic premise with lots contemporary artists with a retro-inspired bent. In recent years, the event has also become a top destination for rum and tropical cocktail enthusiasts. A growing roster of bars, bartenders, industry experts and spirits companies flock to “Fort Liquordale” for the festive atmosphere and friendly fans.

THE MAI-KAI SNEAK PREVIEW
For those of us eagerly awaiting news on the future of the legendary Polynesian palace in Fort Lauderdale, The Hukilau will give us exclusive insights from the new ownership group. Bill Fuller and his crew from Miami’s Barlington Group and Mad Room Hospitality are scheduled to share the refurbishment plans in an exclusive presentation on Saturday, June 11. The 65-year-old restaurant has been closed since October 2020, when a roof collapse shut down the kitchen and back-of-house operations. Luckily, the stunning decor and dining rooms remain intact, but they’re also due for freshening up. The new owners are partnering with the founding Thornton family to keep The Mai-Kai’s rich legacy alive. Also part of the new crew are longtime managers who are hard at work ramping up the bar to serve The Mai-Kai’s famous cocktails for the first time since The Hukilau 2021 in September. Look for a pop-up bar featuring select signature drinks throughout the weekend.
DAVID WONDRICH JOINS THE PARTY
For more than 20 years, this James Beard Award winning author, cocktail historian, mixologist and educator has documented the craft cocktail movement while also becoming one of the world’s foremost authorities on drinks history. The former English professor gained national exposure as Esquire Magazine‘s drinks correspondent, along with his four acclaimed books:Esquire Drinks, Killer Cocktails, Imbibe! and Punch. His most recent gig was senior drinks columnist at The Daily Beast and co-host of the Life Behind Bars podcast. His latest achievement is serving as editor of The Oxford Companion to Spirits and Cocktails, an 860-page opus that serves as the first major reference work on the subject. Wondrich is a frequent guest lecturer and regular seminar host at Tales of the Cocktail in New Orleans. It will be an honor to see the Brooklyn, N.Y., resident make his first appearance at The Hukilau in 2022.

THE RUM AMBASSADOR RETURNS
Ian Burrell is back for his fifth appearance at The Hukilau, teaching an Okole Maluna Cocktail Academy class and hosting one of his signature “$1,000 Rum Tasting” events. The self-appointed global rum ambassador, Burrell is a charismatic spokesman for the spirit, entertaining host, and all-around fun guy to hang out with. Which makes him the perfect fit for The Hukilau. He previously treated villagers to similar premium rum tastings in 2018 and 2019, offering attendees samples of four to six rums that sell at retail for a combined value in excess of $1,000.

THE SURFRAJETTES HEADLINE STRONG MUSICAL LINEUP
Surf music fans are in for a treat as The Hukilau welcomes back The Surfrajettes, the all-female instrumental combo from Canada that has been building an ever-increasing underground following and online fanbase since making their first and only appearance at the event in 2017. The foursome’s long-awaited debut album, Roller Fink, is due out April 22 on Hi-Tide Recordings. Veteran instro surf rockers The Intoxicators will once again make the trek from Tallahassee to knock our socks off for the 16th time. (If we’re lucky, we may also see an appearance of the band’s alter ego, The Disasternauts.) Also appearing is Southern supergroup The Manakooras, featuring members of Satan’s Pilgrims, Aqualads and The Intoxicators. The band boasts a unique blend of surf music with steel guitar, ukulele and exotica-influenced percussion. Last but not least, longtime emcee King Kukulele is back where he belongs after missing The Hukilau 2021. The Southern California musician, comedian and entertainer has been a fixture at Tiki events across the country over the past two decades, including every previous Hukilau through 2019. His humor, ad libs and easy-going style are a much-needed addition.

The Hukilau’s 2020 event in Fort Lauderdale may have been wiped out by the coronavirus pandemic, but that doesn’t mean you can’t celebrate the Polynesian Pop lifestyle in the privacy of your own Tiki bar or with other villagers in your local scene. Many of us were looking forward to the 19th annual edition of the East Coast’s largest Tiki weekender on June 3-7 at the B Ocean Resort and The Mai-Kai restaurant. But we’ll have to wait for next year’s 20th anniversary to meet up with all our old friends, savor rum and Tiki cocktails made by some of the world’s top bartenders, dance to live bands and DJs, watch Marina the Fire Eating Mermaid and her aquaticats perform through the portals of Wreck Bar, plus so much more.
But as the shutdowns, stay-home mandates and restrictions due to the pandemic stretch into a fourth month, it’s possible to get a taste of The Hukilau without going far or putting yourself and others at risk. We’ve come up with ideas stretching over seven days, from educational symposiums to a special virtual event set for Friday and Saturday at The Mai-Kai. While The Hukilau’s kickoff party typically doesn’t launch until Wednesdays, we know many villagers like to arrive early and get a head start. The Hukilau 2019 also featured special events for bartenders starting Monday, so we’re following that plan.

Rum and education are two of the foundational elements of The Hukilau, so what better way to start the week than a special presentation by Matt Pietrek. The former Microsoft specialist and writer has turned his passion for rum and Tiki cocktails into a second career, earning an impressive three nominations in the upcoming 2020 Spirited Awards at Tales of the Cocktail in July.
Pietrek was nominated for Best Cocktail & Spirits Writing for an article on his long-running Cocktail Wonk blog, plus Best New Cocktail or Bartending Book for Minimalist Tiki: A Cocktail Wonk Look at Classic Libations and the Modern Tiki Vanguard, written with his wife Carrie Smith and released last summer. The blog is also among the heavyweight industry players nominated in the Best Cocktail & Spirits Publication category.
In his debut at The Hukilau last year, Pietrek did double duty with a symposium (How the British Navy Influenced the Birth of Tiki) and Okole Maluna Cocktail Academy class (Stocking Your Home Tiki Bar). Pietrek also joined The Atomic Grog for The Rums of The Mai-Kai: From the Back Bar to Your Glass, a special presentation and discussion in the main dining room at the historic restaurant. He was in the midst of digging up more fascinating facts for this year’s Hukilau guests when everything was put on hold.
But Pietrek has kept busy over the past several months with regular appearances online in a very active and engaged rum community. This new presentation covers The London Docks and Rums of the British Empire, an offshoot of his fascination with Navy Rum. Minimalist Tiki is a DIY effort by Pietrek and Smith, so you can support them directly by purchasing the book online.

The Hukilau’s Okole Maluna Cocktail Academy classrooms may be dark this year, but there’s been no shortage of bartender knowledge spreading on the Internet, thanks to many talented mixologists around the world keeping their audience engaged. I’ve never seen so many professional recipes and trusted information available daily like it is now.
Since the pandemic hit, Radev has been tireless. He launched “Mixology From The Fridge” on YouTube and Facebook, featuring dozens of entertaining how-to videos with recipes for cocktails, syrups and more. You can support Radev by watching his YouTube videos, buying his book and ordering items from the Laki Kane online store.
Radev joined forces with another online juggernaut, Tiki marketing maven and event organizer Jupiter Jones, for a weekly “Tiki Tuesday” broadcast on the Zavvy network of shows and podcasts. Their past guests have included Tonga Hut manager and rum/cocktail expert Marie King; Tiki and music historian Brother Cleve; and Trader Vic’s marketing exec Eve Bergeron, granddaughter of company founder Victor Bergeron. All of these VIPs had presentations or pop-up bars last year at The Hukilau, and Brother Cleve was scheduled to return in 2020 as a DJ.
The coronavirus pandemic is not yet in our rear-view mirror, but we’re happy to report that most establishments on this list have been back in operation for quite some time now. While “new normal” continues to be a way of life for everyone in the bar business, we’re happy to see many favorites again operating with an eye on a successful future.
We’ll continue to update this list periodically, concentrating on some key bars and restaurants that are still in transition periods. For the rest, we’ll leave most of the past news and updates documented below as a sobering reminder of what could happen again if we’re not diligent.

Aku Aku, Orlando – This small and inviting mid-mod Tiki oasis near downtown has an online shop featuring gift cards, T-shirts, stickers and mugs. Artist Doug Horne signed his newest mug release, Invisible Man, on Jan. 22, 2022. It quickly sold out, but more were released in early March. Follow the Aku Aku pages onInstagram and Facebook for updates.
Archipelago, Washington, D.C. – The online merch shop for this island-themed neo-Tiki hotspot features a small but well designed assortment of glassware, including snifters and Mai Tai glasses along with a signature mug from Tiki Farm. Gift cards are also available. After operating outdoor patio seating for months, the bar closed in late December 2020 for a winter siesta. Takeout service resumed in February 2021, followed by patio seating. In mid-June 2021, Archipelago resumed indoor seating after 452 days.
Bahi Hut, Sarasota – This historic (est. 1954) but underappreciated Tiki landmark has shirts, pins and mugs available in its online shop. Recognized as the oldest Tiki bar in Florida, Bahi Hut is also site of the annual Tiki Fever event, with version 2.5 held Sept. 30 through Oct. 3, 2021. The bar reopened in October 2020 with both indoor and outdoor seating. In January 2021, a collector’s edition Tiki Fever mug featuring both Marina the Fire Eating Mermaid and The Disasternauts was released. The mug was designed by RoboTiki crafted by Eekum Bookum.
Beachbum Berry’s Latitude 29, New Orleans – The bar and restaurant owned and operated by author and Tiki revival pioneer Jeff “Beachbum” Berry and his wife Annene Kaye is well represented in the BeachbumBerry.com store, including syrups and barware. While you’re there, pick up the Bum’s books so you can make the hundreds of tropical classics at home. Latitude 29 reopened in September 2021 after closing in the wake of Hurricane Ida. Before the storm, Latitude 29 had been open consistently since October 2020 in the wake of the pandemic. An exciting new mug release commemorated Spookilau 2021, when Oakwash produced 150 limited-edition Cursed Coconut mugs. Beachbum Berry’s Sippin’ Santa also returned again for another winter holiday season. The bar closed after ringing in 2022 but returned on Jan. 6. The Hukilau’s 2020 entertainment lineup will be announced on Feb. 3, when event tickets and passes go on sale for the 19th annual Tiki weekender June 3-7 in Fort Lauderdale. After five years as host hotel, the Pier Sixty-Six Hotel & Marina closed for a years-long refurbishment and re-imagining on the day after The Hukilau 2019. For the fifth year in a row, the signature event at The Hukilau has sold out months in advance. The Tiki Tower Takeover, held every June in the 17th floor rooftop ballroom at Pier Sixty-Six in Fort Lauderdale, will have added significance in 2019.
The festive cocktail party that spotlights some of the world’s top Tiki bartenders will celebrate Women Who Tiki with eight female mixologists serving their own special creations. With the hotel closing for a massive refurbishment immediately after The Hukilau, it will also be the last Takeover in the tower for at least two years.

In addition to the all-female theme, the 2019 event will feature a significant increase in participants over past years, when no more than five bartenders were included. The Hukilau takes over the Pier Top Lounge from 5 to 7 p.m. on Thursday, June 6. Prior to boarding the elevators to the tower, villagers can enjoy a welcome drink in the hotel’s ground-floor Windows on the Green.
While individual tickets are no longer available, there’s still one way to gain VIP entry. There are a limited number of South Seas passes available ($399 plus fee) that include exclusive early access at 4 p.m. to the Tiki Tower Takeover plus a custom mug from Tiki Farm. Here’s this year’s all-star lineup of bartenders. All are making their first Tiki Tower Takeover appearance, though two have previously served the welcome drink. No previous events have featured more than five bars, so expect an action-packed (and cocktail-filled) party in the Pier Top Lounge this year.
The Hukilau has announced an impressive lineup of bands, bars and booze experts as it launched a new website with tickets now on sale for the 18th annual Tiki weekender in Fort Lauderdale. Guests can also book rooms at two hotels: the host Pier 66 and the nearby B Ocean Resort.

Polynesian Pop has always been deeply ingrained in American culture, from Tiki’s mid-century heyday through today. This symbiotic relationship will be explored in colorful detail during special symposiums at The Hukilau, the 17th annual Tiki weekender happening June 6-10 in Fort Lauderdale.
Among the special presentations now on sale at TheHukilau.com are “Travel with Trader Sam” hosted by Disney Imagineer Kyle Barnes and “The Golden Age of Tiki and the South Pacific on Television” with film and video collector Ron Ferrell.

Guests who buy multi-day passes get first shot at these and other educational activities, including Okole Maluna Cocktail Academy classes and rum tastings, craft classes with noted artists, plus many other hands-on activities. Also on sale are tickets to the three aquatic performances by Marina the Fire Eating Mermaid and her pod of aquaticats at The Wreck Bar at the nearby B Ocean Resort.
Previously announced were symposiums by special guests including rum and cocktail luminariesIan Burrell and Brother Cleve, craft classes with South Florida artistsTom Fowner and Will Anders, “go-go aerobics” with burlesque queen Angie Pontani, a mid-century makeup symposium, plus hula lessons. The symposiums and craft classes range from $10 to $25, with most priced at just $15. This is a reduction from years past intended to offset a slight rise in the price of passes, which run from $175 to $399.

* “Travel with Trader Sam” with Kyle Barnes (Friday, June 8): What made the Jungle Cruise’s head salesman venture beyond Adventureland? Why open his first cocktail outpost at the Disneyland resort? How did he land on the shores of Seven Seas Lagoon at Walt Disney World? Veteran Walt Disney Imagineer Kyle Barnes will answer these questions and share rarely seen details from the design and development of both locations of Disney’s popular Tiki bar concept.

The Hukilau gave its loyal fans a New Year’s treat by announcing an expanded lineup for the East Coast’s largest Tiki-themed event, giving its regular “villagers” early access and discounts on tickets. The general public can now join the party at the 17th annual mash-up of Polynesian Pop and cocktail culture.
Here are the highlights of the announcement, sent via email and posted on the official website. I also spoke directly with the event’s owner and co-organizer, Richard Oneslager, to get all the scoop on 2018. NEW: As of Feb. 8, this preview is now updated with the late January announcement.

PREVIEW: The Hukilau 2018 highlights
* MUSIC: More headlining bands. The 2018 event will include some of the world’s top surf and exotica bands, including Los Straitjackets, The Madeira, Mr. Ho’s Orchestrotica Quintet and The Martian Denny Orchestra. Villagers will also be thrilled to see the return of The Intoxicators, who missed 2017 after 12 straight appearances. Other performers include The Exotics, Black Flamingos, Czarna Wolgastar, The Royal Pacifics, Skinny Jimmy Stingray, and The Hukilau’s one and only emcee during its previous 16 years, the ubiquitous King Kukulele. Look for more bands to be announced, along with special guest DJs. Bands will perform on all five days in various venues. [More details below]
* BARS: 12 Tiki pop-ups. Seven of last year’s 10 acclaimed bar teams are returning, joined by five new Tiki-themed pop-ups from around the world setting up shop all over Pier 66 at special events, tastings, and classes. Due to popular demand, a second afternoon pool party with complimentary cocktails has been added to the schedule. Back for more more rum and cocktails are bartenders from Dirty Dick (Paris), Flask & Cannon (Jacksonville), Hidden Harbor (Pittsburgh), Nu Lounge Bar (Italy), Three Dots and a Dash (Chicago), Pagan Idol (San Francisco), and S.O.S. * INDUSTRY VIPS: Cocktail influencer makes debut. Boston’s Brother Cleve will bring his vast knowledge of cocktails and music to The Hukilau for the first time. This prime mover of the craft cocktail scene in the 1990s and former member of the groundbreaking band Combustible Edison will present a symposium, make a special DJ appearance, and also have his own bar in the Tiki Tower Takeover event. In addition, rum ambassador Ian Burrell returns from London for a second straight year to host a symposium, two cocktail classes and a special rum tasting. [More details below]
* TIKI TOWER TAKEOVER: Signature cocktail party expands, returns for Round 4. Held on Thursday night in the hotel’s revolving Pier Top Lounge, the fourth edition of one of Tiki’s most exclusive events is likely to sell out just as fast as the previous three. Tickets are limited to passholders, so act now. The lineup will grow from four to five pop-ups (featuring six different bar teams), including returning participants Three Dots and a Dash and Daniele Dalla Pola of Nu Lounge Bar. Scotty Schuder of Dirty Dick also returns, teaming up with Pagan Idol for a special two-bar mash-up. The final two pop-ups will feature the craft cocktail stylings of Brother Cleve and the crew from the U.K.’s Trailer Happiness. [More details below]
* MERCHANDISE: Works of top Tiki artists on display. The official artists for The Hukilau 2018 are Joe Vitale and Donella Vitale, whose work can already been seen on the website and promo artwork. The couple is based in Orlando, where they both work for Disney in addition to being among the most recognizable artists of the Tiki revival. Fun fact: The Vitales are among a select few who have attended The Hukilau all 16 years, along with emcee King Kukulele and co-founder Tim “Swanky” Glazner. Villagers will get first shot at the event merchandise, including the 17th annual mug produced by Eekum Bookum. There will also be special items for some villagers, including a South Seas passholder pendant by Crazy Al Evans.

* ENHANCEMENTS: Feedback from villagers. The Hukilau listened to its attendees and will implement quite a few changes: Extended hours and a second pool party on Saturday (in addition to Friday) including live music, more bars and bands (see above), a “Villager’s Lounge” tent to “meet and hang with old friends and new,” a party featuring all exotica music, and more food trucks.
* MORE SPECIAL EVENTS: Symposiums, Medusirena Marina swimshows. Symposiums, craft workshops, Okole Maluna cocktail classes, hula lessons, plus more new additions were announced in late January. These include three swimshows featuring Marina the Fire Eating Mermaid in her home at the nearby Wreck Bar in the B Ocean Resort, plus symposiums on Disney’s Trader Sam’s Tiki bar concept and the heyday of Tiki on television. Craft workshops will feature a trio of noted Tiki artists, while cocktail classes will include bartenders and experts from across the country.
